
Air Fryer Cod en Papillote

Ingredients
- 2 cod fillets, about 200g each
- 2 handfuls green beans, trimmed and halved
- 2 handfuls cherry tomatoes, halved
- 2 small handfuls pitted olives, roughly smashed (Castelvetrano or Kalamata work well)
- 2 sprigs thyme
- Olive oil
- Salt and freshly ground black pepper
- Parchment paper
Instructions
Prep the Parchment: Cut 2 large squares of parchment paper, about 40 x 30 cm each, and place them flat on the counter.
Assemble the Packets: Place the green beans in the center of each parchment sheet. Lay one cod fillet on top of each portion of green beans. Season the fish with a pinch of salt. Scatter cherry tomatoes and smashed olives over the fish, add one sprig of thyme to each packet, and drizzle with olive oil. Season with a little more salt and freshly ground black pepper.
Fold the Packets: Fold the parchment over the fish and crimp or twist the edges to seal it into a packet. It does not need to look perfect, but it should be closed well enough to keep the steam inside.
Air Fry: Place the packets into the air fryer basket. Air fry at 190°C for 15 minutes.
Rest and Serve: Let the packets sit for 2 minutes before opening. Be careful when opening, as hot steam will escape!
