
Air Fryer Potato Skins
This air fryer variation of classic potato skins makes for a mouth-watering appetizer!

Ingredients
- 8 small russet potatoes, scrubbed
- 2 tablespoons Roasted Garlic Avocado Oil
- 1½ teaspoons Garlic Pepper Seasoning, divided
- 2 cups shredded mild Cheddar cheese
- ½ pound bacon slices, cooked and crumbled (about 1 cup)
- Sliced green onions, sour cream, optional
Instructions
Pierce scrubbed potatoes with a fork in several spots. Rub or brush potatoes with 1 tablespoon Roasted Garlic Avocado Oil. Sprinkle with 1 teaspoon Garlic Pepper Seasoning.
Place potatoes in air fryer basket or on rack in lowest position in air fryer. Set air fryer to 400°F (do not preheat). Air fry 40 minutes or until potatoes are fork tender. Remove from fryer. Let cool. Cut potatoes in half; scoop out flesh (reserve flesh for another use such as mashed potatoes).
Brush insides of potatoes with remaining 1 tablespoon Roasted Garlic Avocado Oil and sprinkle with remaining ½ teaspoon Garlic Pepper Seasoning.
Place potato shells, skin-side-down, in air fryer basket or on rack in lowest position in air fryer. Set air fryer to 400°F. Air fry in batches if needed, until flesh is nicely browned, about 3-4 minutes. Remove and top with cheese and bacon. Continue air frying 2-3 minutes or until cheese is melted and nicely browned. Garnish with green onions and sour cream, if desired.
