CREAMY POLLO PESTO WRAP

It absolutely would not be a Lunch Series by me if there wasn’t a creamy wrap in there would it? 🤣 I can’t believe I’m saying it but I think this is actually my favourite one yet…it’s basically like the Pollo Pesto from a certain Pizza Chain, but inside a Wrap - IT WAS SO GOOD 🤤🤤🤤🤤 Please run, not walk, run - and make this as soon as you can Lovelies as oh my 😍😍😍

Ingredients

  • 120g Chicken Breast, raw
  • 1 Flour Tortilla Wrap
  • 20g Pesto
  • 30g Light Cream Cheese
  • 20g Mozzarella, grated
  • 10g Parmesan, grated
  • 1/2 small Red Onion, diced
  • cooking spray
  • salt and pepper

Instructions

Dice up your chicken into bite sized chunks, then add to a pan with some cooking spray and a good pinch of salt and pepper; cook over a medium heat for about 6 or 7 minutes or until browned and fully cooked through.

Once your chicken is cooked, add it to a bowl with your pesto, cream cheese, red onion, mozzarella and parmesan, then mix it all together well.

Now to assemble your wrap - simply lay the chicken mix across the middle and then fold up the wrap as if it was a Burrito or however you’d like; this should be quite an easy one to fold :)

Using the same pan you cooked your chicken in, spray it will a little more cooking spray and and cook your wrap for about 5 minutes over a medium heat, or until the outside is all golden and crispy; be sure to turn it halfway so it gets an even colour.
