Eggless Chocolate Chunk Scoop Cookies🍫🍪

Ingredients

  • 75g salted, brown butter (Take about 90g of butter and brown it. This should get you about 75g brown butter)
  • 50g caster sugar
  • 75g brown sugar
  • 45g curd / yogurt
  • 1tsp vanilla extract
  • 140g all purpose flour
  • Pinch of baking soda
  • 100g chopped chocolate (I use a combination of dark and milk chocolate)
  • Chocolate chunks to stuff in between the cookie dough balls

Instructions

Melt the butter in a saucepan and cook until the milk solids turn golden brown and the kitchen smells HEAVENLY.

Add this to a bowl with caster sugar, brown sugar, curd, and vanilla until smooth and glossy.

Sift in the flour and baking soda (add a pinch of salt if using unsalted butter). Mix just until a soft cookie dough forms.

Fold in the chopped chocolate. Don’t overmix.

Scoop the dough into balls (I like weighing them so they’re all the same size) and place them in a tin as shown in the video. Freeze this for at least 30 minutes so that the cookies remain thick and chewy.

Bake at 180°C for 13–15 minutes, until the edges look set but the centres still look slightly underbaked.
