
Fudgy Brownies
A semi-professional baker admits she couldn't bake a good brownie, but now she's developed a recipe worthy of brownie connoisseurs. This recipe promises fudgy, delicious brownies with white chocolate chips.

Ingredients
- 130g butter
- 200g sugar
- a dash of vanilla
- 2 eggs
- 100g dark chocolate
- 2 heaped tablespoons of corn flour (or cornstarch)
- 65g of plain flour
- 65g of cocoa powder
- a handful of white chocolate chips
Instructions
Place 130g of butter into a bowl and melt it (professionally, not in the microwave).
Sprinkle in 200g of sugar and give it a stir.
Add in a dash of vanilla.
Crack in 2 eggs and beat this quite vigorously.
Set the mixture aside for a couple of minutes.
In a heatproof bowl, melt 100g of dark chocolate.
Add the melted chocolate to the egg mixture.
Give it some "whisky business" (whisk it).
Add in two heaped tablespoons of corn flour (or cornstarch in America).
Do more "whisky business" (whisk it).
Add 65g of plain flour and 65g of cocoa powder.
Stir this through until it's about halfway combined and there's still some dry ingredients visible.
Add some white chocolate chips (about a handful) and stir.
Pour the mixture into a 7x11 inch tin.
Bake in the oven at 180°C for 20 to 25 minutes.
