
Greek-Style High Protein Pasta Salad with Slow-Cooked Lamb
My most requested high protein recipe is this really tasty pasta salad, Greek style with slow cooked lamb, cucumbers, red onion, tzatziki, roasted red peppers, olives and topped with herbs, feta and oregano

- 500g farfalle pasta
- 2 cups tzatziki
- 1 cup diced cucumber
- 1 cup sliced red onion
- 1/2 cup roasted red peppers
- 1/2 cup Kalamata olives
- 2-4 cups lamb shoulder
- Crumbled feta, dill and mint to taste
- Salt, pepper, oregano and olive oil to taste
Instructions

Cook the lamb in advance, once it is resting cook your pasta 1 minute below packet instructions. Shred the lamb while the pasta is cooking.

Add pasta to a bowl and mix with olive oil, salt, pepper and oregano.

Combine ingredients in a bowl and top with more lamb, dill, mint and feta.
