Ingredients
- 2/3 cup mayonnaise
- 1/4 cup red wine vinegar
- 1 Tbsp. sliced chives, plus more for serving
- 1 tsp. garlic powder
- Kosher salt
- Freshly ground black pepper
- 2 lb. Yukon Gold potatoes, boiled, cut into 1" pieces
- 10 slices bacon, cooked, crumbled
- 2 jalapeños, thinly sliced
- 2 cups shredded cheddar

In a medium bowl, combine mayonnaise, vinegar, chives, and garlic powder; season with salt and pepper and whisk to combine.

In a large bowl, combine potatoes, bacon, jalapeños, and cheddar. Add dressing and stir to combine. Top with chives.
