Ingredients
- 6 chicken thighs
- 2 bell peppers
- 1 onion
- 1 tbsp minced ginger
- 1 tbsp minced garlic
- 1 red chilli
- 150g dry basmati rice
- 1 tbsp gara masala
- 1 tbsp chicken tikka paste
- 2 tsp turmeric
- 400ml chicken stock
- 4 tbsp natural yoghurt
- 2 tbsp tikka paste
- 1 tbsp gara masala
- 1 tsp turmeric
- Lemon Wedges
- 1-2 tbsp fresh coriander
- 2-3 tsp mango chutney
Instructions

Marinate chicken with yoghurt, tikka paste, garam masala + turmeric.

Brown the chicken in a hot pan (10–12 mins), then set aside.

Sauté onions, garlic + ginger until golden.

Add peppers, chilli, tikka paste + turmeric. Cook until soft.

Stir in rice + stock, season well.

Nestle chicken back in, cover + simmer until rice is cooked.

Garnish with coriander, lemon + mango chutney. Tuck in and enjoy!
