- 4 5-oz boneless pork chops
- Kosher salt and pepper
- 1 cup panko
- 3 Tbsp. olive oil
- 1 baguette, split in half horizontally
- 4 oz. fresh mozzarella, thinly sliced
- 4 cups arugula
- 2 Tbsp. lemon juice
- Tomato salad, for serving
Instructions
Pound pork chops to 1/4 inch thickness and season with 1/2 teaspoon each salt and pepper. Coat pork in panko, pressing gently to help it adhere.
Heat oil in a large skillet on medium. Cook pork in batches until golden brown, 4 minutes per side, adding more oil as necessary.
Place baguette cut-side up on rimmed baking sheet. Layer bottom half with mozzarella and broil until toasty and melted.
In a bowl, toss arugula with lemon juice and pinch each salt and pepper. Form sandwiches with cheesy toast, pork, and arugula, then cut into four pieces. Serve with tomato wedges tossed with sliced scallions, olive oil, lemon juice, and salt and pepper, if desired.
