Ingredients
- 2 Tbsp. fresh lemon juice
- 1/2 tsp. Dijon mustard
- 1/4 cup extra-virgin olive oil
- Kosher salt
- Freshly ground black pepper
- 2 rotisserie chicken breasts, shredded or cut into 1/2" pieces
- 1/4 small red onion, thinly sliced
- 5 cups packed baby spinach (about 5 oz.)
- 2 cups thinly sliced strawberries
- 3/4 cup coarsely chopped toasted pecans, divided
- 5 oz. feta, crumbled
Instructions

In a large bowl, whisk lemon juice and mustard. While whisking, slowly pour in oil until smooth and emulsified; season with salt and pepper.

Add chicken, onion, spinach, strawberries, and 1/2 cup pecans and toss to combine.

Pile salad onto plates. Top with remaining 1/4 cup pecans and a generous crumbling of feta.
