  • pork tenderloin, cut into 2" slices
  • 2 Tbsp. chili powder
  • 1/2 cup barbecue sauce
  • 2 Tbsp. spicy brown mustard
  • 3 cups slaw mix
  • 2 Tbsp. cider vinegar
  • 4 brioche buns

Add steamer insert to large saucepot filled with 2 inches water; cover and heat to boiling.

Rub pork tenderloin with chili powder and 1⁄2 teaspoon salt; add to steamer. Reduce heat to maintain simmer; cook pork, covered, 20 minutes or until tender.

Cool slightly; with hands, shred pork, then toss with barbecue sauce and spicy brown mustard.

Toss slaw mix with cider vinegar and pinch salt. Serve on brioche buns, split and toasted, topped with slaw.
